Quinoa is our best friend.
This super-seed has it all. Packed with flavonoids, it also makes up a complete serving of protein which is pretty awesome. Quinoa is also fibre rich and studies show one serving a day could decrease inflammation of the digestive system which could prove to help eradicate things like colon cancer in the future. Its grain-like consistency when cooked makes it a perfect substitution to those not eating grains or gluten and because it is so easy to digest it is perfect for toddlers and children.
There are a millions and twenty good reasons to eat quinoa so I urge to to go online and check it out for yourself.
Todays mid-morning post is for a quick, nutritious lunch that include chickpeas (arguably my favourite food), coriander, turmeric, smoked paprika, cumin and of course, our quinoa. I added some leftover bacon to mine as I like the little crispy crunch of it but there is no need to if you don’t like it or eat it. So here is my recipe for lunch. Enough for 2 servings.
Easy Golden Quinoa Salad
-100g dried quinoa (waitrose do a great one)
– 1 tin of organic chickpeas
-small handful of chopped coriander (cilantro)
-1 teaspoon ground cumin
-1 teaspoon smoked paprika
-sprinkle of turmeric
-salt and pepper
Start by cooking your quinoa, there should be instructions on the packet but its much like cooking rice.
Once cooked add everything to a bowl and mix together, season with salt and pepper and enjoy. This recipe is so easy and good for you. You can eat it hot or cold, make it the night before for a healthy working lunch or if you like the look of this slaw tune in this evening for my dinner recipe.
